Mais alimentairement parlant, c\u2019est tout comme: il a v\u00e9cu, avec les Qu\u00e9b\u00e9cois et Montr\u00e9alais qui ont eu conscience des bouleversements de la r\u00e9volution tranquille et de l\u2019Expo 67, une incroyable \u00e9pop\u00e9e culinaire.<\/p>\n<p>Gilles Thibert est n\u00e9 \u00e0 St-Jude, pr\u00e8s de St-Hyacinthe, mais il a grandi \u00e0 Ste-Martine, pr\u00e8s de Ch\u00e2teauguay &#8211; un village tout \u00e0 fait banal. L\u2019enfance culinaire de mon p\u00e8re, elle, ne l\u2019a pas \u00e9t\u00e9, puisque ma grand-m\u00e8re avait un restaurant (le seul du village), Chez Gaby. Mon p\u00e8re a donc \u00e9t\u00e9 nourri \u00e0 la \u00ab\u00a0cuisine canadienne\u00a0\u00bb des ann\u00e9es 50, c\u2019est-\u00e0-dire au Club Sandwich, Hot Chicken, p\u00e2t\u00e9 au poulet (avec petits pois en conserve), tourti\u00e8re, roti de porc, poulet roti, \u00ab\u00a0fish and chip\u00a0\u00bb, etc. et ketchup maison.<\/p>\n<p>Son horizon culinaire, cela dit, ne s\u2019arr\u00eatait pas l\u00e0. Sa m\u00e8re l\u2019amenait souvent magasiner \u00ab\u00a0en ville\u00a0\u00bb et ils allaient toujours, lors de ces p\u00e8lerinages urbains, chez Da Giovanni sur Ste-Catherine (celui-l\u00e0 m\u00eame qui existe toujours) ou alors au Caf\u00e9 Jasmine dans le Quartier chinois. Montr\u00e9al, cit\u00e9 du spaghetti, de la pizza, du riz collant et des eggs rolls.<\/p>\n<p>En 1964, mon p\u00e8re d\u00e9m\u00e9nage seul \u00e0 Montr\u00e9al pour entreprendre des \u00e9tudes universitaires \u00e0 l\u2019UdM. Il habite sur Maplewood (devenue \u00c9douard-Montpetit) et mange, durant les premiers mois, autour de chez lui.\u00a0 Il partage alors un appartement avec 3 autres \u00e9tudiants et comme ses parents tenaient un restaurant c\u2019est lui qui est d\u00e9sign\u00e9 \u00ab\u00a0cuisinier-en-r\u00e9sidence\u00a0\u00bb.\u00a0 \u00a0\u00c0 cette \u00e9poque, on mange \u00e0 C\u00f4te-des-neiges principalement de l\u2019italien, du fran\u00e7ais\u2026 et de la \u00ab\u00a0cuisine canadienne\u00a0\u00bb \u00e0 la Maisonn\u00e9e (voir carte mentale dessin\u00e9e par mon p\u00e8re). Le souvenir du restaurant Vito (doubl\u00e9 du bar Crazy Horse) est particuli\u00e8rement marquant, comme celui de La cr\u00eape bretonne sur la rue de la Montagne au centre-ville (o\u00f9 de nombreux \u00e9tudiants venaient, apparemment, s\u2019abreuver de cidre).<\/p>\n<p>\u00c0 sa deuxi\u00e8me ann\u00e9e d\u2019universit\u00e9, il partage un appartement avec un autre \u00e9tudiant originaire du m\u00eame village que lui; ils d\u00e9cident alors d\u2019explorer plus \u00e0 fond la gastronomie fran\u00e7aise.\u00a0 Chaque semaine, l\u2019un ou l\u2019autre va acheter des \u00ab\u00a0T-bone\u00a0 steaks\u00a0\u00bb, un fromage import\u00e9 et une bouteille de vin au comptoir de la \u00ab\u00a0Commission des liqueurs\u00a0\u00bb (qui est devenue depuis la Soci\u00e9t\u00e9 des alcools) o\u00f9 il faut choisir sur une liste affich\u00e9e au mur pour aller ensuite la demander au comptoir.<\/p>\n<p>Quelques ann\u00e9es passent et le paysage culinaire montr\u00e9alais change. Tout d\u2019abord, un certain nombre de vietnamiens fuyant la guerre arrivent \u00e0 Montr\u00e9al \u00e0 partir de 1965 et on voit alors l\u2019apparition de plusieurs restaurants pr\u00e8s de l\u2019universit\u00e9. Mon p\u00e8re, qui ne conna\u00eet rien d\u2019autre \u00e0 la cuisine asiatique que les eggs rolls, le riz frit, le chop suey, le chow mein et les \u00ab\u00a0spare ribs\u00a0\u00bb devient un habitu\u00e9. Ci-dessus: le carrefour international, o\u00f9 de nombreux Montr\u00e9alais ont go\u00fbt\u00e9 \u00e0 de la choucroute ou du couscous pour la premi\u00e8re fois. Alimentairement parlant, il y a pour les gens de sa g\u00e9n\u00e9ration un avant et un apr\u00e8s. Fini le poisson pan\u00e9 congel\u00e9, les chops de porc bouillies et le Spam sur des biscuits soda. Mes parents se rencontrent au d\u00e9but des ann\u00e9es 70, se marient en 1972 et se mettent \u00e0 \u00ab\u00a0cuisiner\u00a0\u00bb autrement \u00a0(\u00e0 partir des recettes publi\u00e9es dans les revues et livres de cuisine de la collection Time Life). Le couscous, la paella et le pain baguette font d\u00e9sormais partie de la culture alimentaire montr\u00e9alaise.<\/p>\n<p>\u00c0 partir des ann\u00e9es 80, \u00e7a d\u00e9boule. Mes parents ach\u00e8tent (parfois) des fromages fran\u00e7ais, le pain devient de plus en plus cro\u00fbt\u00e9 et de moins en moins tranch\u00e9 et le pesto fait son entr\u00e9e dans nos vie vers 1989 (je m\u2019en souviens tr\u00e8s bien parce que l\u2019\u00e9t\u00e9 o\u00f9 mes parents l\u2019ont d\u00e9couvert on en a mang\u00e9 10 ou 15 fois).<\/p>\n<p>La suite a plus ou moins d\u2019importance, parce qu\u2019on s\u2019en souvient et parce que Montr\u00e9al se \u00ab\u00a0globalise\u00a0\u00bb comme toutes les autres villes. Mais c\u2019est important, parfois, de s\u2019arr\u00eater un instant pour se rappeler que le Tzatziki et le Baba ghanouj n\u2019ont pas toujours \u00e9t\u00e9 des condiments \u00ab\u00a0ordinaires\u00a0\u00bb et qu\u2019\u00e0 une certaine \u00e9poque, pas si lointaine, personne au Qu\u00e9bec (ou presque) n\u2019avait entendu parler du vinaigre balsamique. \u00c0 une \u00e9poque, pas si lointaine, on utilisait l\u2019huile d\u2019olive, qu\u2019on se procurait dans de toutes petites bouteilles, pour la faire boire aux chats (!!)
